Sweet & Spicy Fish Maw Soup

Recipe from my dad

Serves 4

Ingredients

- 1L of chicken/pork broth

- 4-6 pieces of fish maw (cut into 2cm pieces)

- 300g of minced pork

- 3-4 pieces of bamboo shoots (sliced)

- 2 large chillies

- 1cm knob of ginger

- 1tbsp of light soy sauce

- 1tbsp white sugar

- 1tsp of salt

- 1.5 tbsp of corn starch mixed with 1.5tbsp water

- 1 egg

- 1 tsp of chicken stock to taste

- 1tsp of vinegar to taste prior to serving


Method

1. Remove the chilli seeds. Mince the ginger and chilli together.

2. Add 2 tbsp oil to a medium sized pot. Stir fry the ginger and chilli until fragrant.

3. Add the minced pork into the stir fry and light soy sauce. Cook till browned.

4. Add the 1L of pork/chicken broth into the pot.

5. Once boiling, add the bamboo shoots and fish maw.

7. Add the sugar and salt into the broth. Turn down the heat to low and simmer.

6. Once the fish maw is cooked through, taste and if needed add 1tsp of chicken stock.

7. Turn up to high heat, and add the cornstarch until soup thickens.

8. Whisk an egg, and pour over the soup. Take off heat immediately.

9. To serve, add 1-1.5tsp of vinegar to taste.
